Kefalotyri or kefalotiri is a traditional Greek cheese made from sheep’s milk and/or goat’s milk. It is a very hard, light-yellow cheese with a sharp flavour and dry texture, tasting similar to Gruyere. With a strong, rich aroma this cheese is best served with fresh seasonal fruits such as pears, figs and grapes alongside a red wine.
