Salted anchovies are preserved in salt to enhance their flavour. Salted anchovies are a bit more work, but they are worth it! The backbone and tail only take a few seconds to remove. Then, soak the fish in cold water for about 15 minutes (or if you’re in a hurry, just rinse) to yield their heavenly flavour. We actually find them less salty once rinsed. Once opened, store in an air-tight container covered with all of the salt and brine.
