Not only is feta the most famous of Greek cheeses, it is one of the most popular cheeses worldwide for its use in salads and other healthy, light meals. It has been dated back to Homer’s time. It is made from sheep’s milk or mixed with up to 30% of goat’s milk.
A soft, white cheese, feta is ripened and kept in brine before eating. It is then sold in containers in brine, which helps to keep it a little longer. It is a salty cheese, with a unique crumbly texture, naturally very white. An extremely versatile cheese, it can be used as a table cheese, fried in saganaki, crumbled in Greek salad, as part of a meze, in cheese pies, or used with many other meals.
